Zesty Chick’nless Parmesan
Does anyone have a case of the “Mondays”? Want a quick and easy way to liven up the dinner table this Meatless Monday? You’re in for a treat! I’m officially sharing with you my signature Chick’nless Parmesan dish, my absolute favorite of my cruelty free recipes and my personal “go-to” when I need something quick, easy and delicious to prepare for dinner guests. If you’re looking for a healthy dish free of animal products that tastes like the “real” thing, this one’s for you.
Here’s what you need for the casserole dish:
-Gardein crispy chick’n filets
-Your favorite whole grain spaghetti (you can also use rice pasta for this)
-One large can of your favorite pasta sauce
-Daiya mozzarella cheese and veggie-based parmesan cheese (I use a mixture of cheddar, mozzarella, pepperjack and parmesan cheese for mine)
Rolls & Dipping Oil (Optional):
Alexa Whole Grain, French or Ciabatta Rolls
Olive Oil seasoned with:
– sundried tomatoes, pesto, basil, onion powder, parsley, marjoram, oregano, thyme, cayenne pepper, salt & black pepper (season to taste)
*Note: You should be able to find these ingredients at most major grocery stores. I get everything at my local Kroger.
-Total estimated time to make: 40 minutes
Start with your Gardein crispy chick’n filets.
Boil your pasta and brown the filets over medium-high heat. I boil my pasta for about 8 minutes and brown the filets for about 4 minutes on each side. While this step is in process, you can be baking your rolls per package directions, which only takes about 10 minutes. Add seasonings to your dipping oil.
Drain the pasta and move it back to the original pan. Add pasta sauce, being careful to leave a small amount in the jar. You will need this later. Season the pasta to taste.
Transfer the pasta to your baking dish and place the browned filets on top.
Pour remaining pasta sauce over dish.
The next step is to add your cheese to the top of the dish. Here is the selection of veggie-based cheeses I prefer.
I first add a layer of the Daiya mozzarella cheese, then the Go Veggie cheddar and pepper jack blend, and finally I top it with Go Veggie parmesan cheese.
At this point, you should have already removed your rolls from the oven, so that you will have the rolls and dipping oil as an appetizer while you are baking your dish. Place in oven and bake at 350 degrees for 25-30 minutes.
Remove from oven and cut into squares.
